Vegan Beet Humus
With more time at home now is the perfect time to try out your cooking skills. And what better way to start than with some delicious eco friendly (vegan friendly) recipe ideas! To get started I wanted to dry not only one of the tastiest snacks I have found but also by far the prettiest… beet hummus! Now it might sound odd to add beets to hummus but it is definitely a must try and gives this new snack and extra kick.
1 | WHY BEET HUMMUS?
This recipe, in particular, is not only vegan but allows you to eat one of your favorite snacks without all the processing and plastic packaging! Adding beets to this easy snack is also a great way to get those rich nutrients and vitamins in your diet. Beets have a huge range of health benefits such as lowering blood pressure, improving digestion, and building immunity. Adding beets to your diet can also give you more energy and make your skin glow! There is research going on that shows that beets cna play a positive role in brain health and can even positively impact neuroplasticity in the aging brain. Along with the health benefits, beets can add a subtle flavor and vibrant color to any food.
2 | RECIPE
Now let's get to the recipe! You’ll need:
- Blender
- 2 cups dry garbanzo beans soaked overnight (you can also use 1 can of garbanzo beans)
- 2 tbsp sesame seeds
- 1 tbsp lemon zest
- 3 tbsp lemon juice
- 2-3 cloves of garlic ( depending on size)
- 1 small cooked beet
- ¼ cup olive oil (you can also use any substitute but I have found olive oil gives the best consistency)
1. Now all you have to do is throw all of this into your blender and blend until you get a nice thick consistency.
2. You should get this beautiful pink color. If it is too liquidy you can add more chickpeas to thicken it up.
